At the 2026 edition of Madrid Fusión Alimentos de España, Argentina is emphasizing its culinary heritage under the theme “El origen como vanguardia” (“Origin as Vanguard”). The event, which is regarded as one of the most important global gastronomic summits, features chef Florencia Rodríguez representing Argentina.
Rodríguez, who leads El Nuevo Progreso in Tilcara, Jujuy, is known for her approach that blends ancestral products and regional techniques with innovation. She said, “True vanguard does not only reside in technology but in a deep respect for traceability, local products and the rituals of Quebrada de Humahuaca.”
Argentina’s presence at IFEMA includes a pavilion over 100 square meters. The country’s delegation features chefs such as Patricio Negro, Matías Gutiérrez, Gunther Moros, Luciano Nanni and Alejandra Repetto. Brand ambassadors Javier Brichetto and Carito Lourenço are also part of the group. Together they showcase a range of flavors from across Argentina.
The participation is coordinated by FEHGRA with support from Marca País and the Ministry of Foreign Affairs. According to organizers, this initiative aims to highlight gastronomy as a driver of cultural and tourism development.
With its focus on authenticity and protection of food heritage, Argentina seeks to contribute to international discussions about the future of cuisine.
Madrid Fusión 2026 takes place from January 26 to 28 in Madrid, Spain. The congress brings together leaders in gastronomy to discuss topics such as sustainability and innovation.
