Jujuy advances project to develop new gastronomic tourism circuits

Jujuy has taken a significant step toward making its local cuisine a distinct tourist attraction. A team from the Federal Investment Council (CFI), along with specialists led by chef Narda Lepes, visited the province to move forward with “Sabores con Identidad,” a project aimed at organizing and promoting Jujuy’s culinary scene through a territorial approach.

Meetings were held with the Ministry of Culture and Tourism, the National University of Jujuy, and sector representatives. The discussions focused on three main areas: defining future gastronomic circuits, setting clear criteria for selecting businesses, and designing a plan for field surveys in the coming weeks.

The project’s goal is to provide chefs, producers, and local businesses with more tools, greater visibility, and increased opportunities within a tourism offering that reflects regional identity.

Federico Posadas, Minister of Culture and Tourism, commented on the project’s scope: “We are not just talking about typical dishes. We want to highlight the history behind each kitchen and give prominence to those who sustain this identity every day. This can create real jobs in communities and position Jujuy in an entirely new place on the country’s gastronomic map.”

In this initial phase, technical teams and local stakeholders assessed each area’s potential—including products, infrastructure, and community connections—to determine which territories could be included in the circuits. Criteria were also agreed upon to recognize enterprises with local identity: use of regional products, rootedness in tradition, sustainability, innovation, and knowledge sharing.

A schedule was set for fieldwork to survey restaurants, fairs, markets, cooks, and festivals. This mapping will help build an accurate diagnosis of current culinary practices in Jujuy and identify experiences that can be offered to visitors.

The project includes plans for a pilot circuit as well as training sessions on cultural storytelling, innovation, tourist service skills, best practices, and digital communication so that selected businesses can strengthen their offerings.
